This thesis examines the generation, management, and reduction of food waste in two full-service restaurants in Budapest: Spicy Fish, a Chinese shared-dish restaurant, and Menza, a Hungarian individual-portion restaurant. The study aims to identify the main sources and types of food waste, compare operational practices, and explore the attitudes and responsibilities related to waste management. A qualitative case study approach was applied, using semi-structured interviews with managers, chefs and waiters, along with on-site observations. The findings show clear differences between the two restaurants, driven mainly by cuisine style, portioning habits, menu structure, and customer behaviour. Spicy Fish generates larger plate waste and preparation waste due to shared dishes, wide menu variety and frequent over-ordering, while Menza produces more predictable quantities of waste related to forecasting and portion control. Both restaurants recognise the importance of waste reduction, but their practices vary in consistency and effectiveness. The analysis highlights several improvement opportunities, including better inventory planning, clearer portion communication, and enhanced staff involvement. The thesis provides practical insights for restaurant managers and contributes to the understanding of food waste challenges in the hospitality sector.
